this may sound a wee bit daft - but i got hold of various eval versions of Microsoft server 2003,
now sorry for supreme thickness,
im presuming i cant use this server edition as an ordinary version of windows? eg, it wont install and play games and office apps?
but i can use these for a download box, personal web hosting, remote access that sorta thing?

Well you can use it for what you like but bear in mind:
1. Driver support (for example in testing I tried to install it on some optiplex dell machine, before putting it on a server...wasnt happenening...no drivers)
2. Software support (everything runs on XP....doesnt guarantee it will run on 2003 I dont think...)
But appart from that should be fine for most things.
